I knew the taste would be good, but I didn't expect it to be SO good that I would be writing about it in my blog. Yes, I will give you one more recipe, and this one is 100% from the ingredients I had in my pantry and fridge.
Orzo pasta, tilapia, tomatoes, celery, parsley, and my favorite feta cheese.... how can I turn this into a meal? I find tilapia a little boring since it has very little flavor. However you can mix with a lot of different ingredientes and make it a great component in your plate.
It is really a light meal, nothing fancy, BUT beware - it is extremely delicious!

Orzo Tilatia Salad
1 pound of tilatia
1 cup of orzo pasta
4 oz feta cheese
1 /2 cup of parsley
1/2 cup of celery
2 fresh tomatoes
1/2 cup of lemon juice
1/3 cup of olive oil
1/2 cup of dijon mustard
1 tablespoon of lemon zest
Salt and black papper to taste
1 - Place large pot of water and bring to boil, put the orzo for about 12 minutes. Rinse with cold water and drain well.
2 - Preheat oven to 425 F. Place tilapia fillets in the dish and sprinkle both sides with olive oil, salt and black pepper. Bake for approximately 12 - 14 minutes. Let it sit for about 5 minutes. Cut into small pieces
3 - While cooking the orzo and the fillets, choop fine the fresh tomatoes, parsley and celery and place in a big bowl along with the feta cheese. Mix the dijon mustard, olive oil, lemon juice, lemon zest, and sprinkle salt and black pepper.
4 - Toss orzo and fish, stir well.
The celery gives a crunch herb favor along with the parsley, the tomatoes give a moist feeling and the feta cheese link it all together with a fantastic flavor. The fish gains a great deal of taste when combined with the dijon mustard and the lemon.
For an extra citrus taste, aprinkle lemon juice on the top of your portion and add some slices of orange on the side, it will clear and fresh your month between bites.
Note: Pair with a good white wine!
